The farm is one of only four traditional Single Gloucester producers in the world.

Single Gloucester

This is made from full cream milk from the morning milking, and skimmed milk from the evening milking. All the milk is unpasteurised, and vegetarian rennet is used. The cheese is aged for at least three weeks.

Protected Designation of Origin (PDO)

Double Gloucester

This is made from full cream milk from both the morning and evening milkings, with annatto (traditional dye). All the milk is unpasteurised, and vegetarian rennet is used. It is aged for a minimum of 6 months.

Harefield

This is a Smart's speciality cheese, and may be considered to be the Gloucester version of parmesan. Originally made from the Single Gloucester recipe, we have spent several years adapting our recipe, and now the Harefield is a cheese in its own right. Being matured for up to two years gives it its own distinctive sweet and nutty flavour.
